時差がなければ沢山話すことが出来たのになって英語でなんて言うの？

もし一定の条件が合っていればできたのに、実際はできなかった。という時に使えるのが could have ＋動詞の過去分詞です。 「時差」は、time difference や the difference in time と言えます。 「沢山話す・もっと話す」は、talk a lot, talk more, chat longer, speak longer などが使えます。 ご参考まで！

英語で we could have〜　とは、「〜できたのにな」となります。なので、たくさん又はもっと話せたのにな、と言う時は we could have talked a lot, we could have talked more となります。話足りなくてもっと話したかった場合は we could have talked moreとなります。 If it weren't for 〜とは英語で「〜が無ければ」という意味です。時差が無ければ＝ if it weren't for the time differenceとなります。時差は time differenceです。　 ご参考にどうぞ。
