As in "You have really opened my eyes to what the future generations may have to tackle. Thank you!"

Thanks for everything is a very general, correct and precise way to thank someone for multiple things or services. If you would like to be more specific, you could say "thanks for all the things you have taught me". This way you are very specific about what you are thanking your teacher for. More formally and elegantly, you could say, "thanks! I really appreciate everything you have done for me". This is a very common way to express thanks and appreciation for multiple things. It is both formal and informal. "Thanks, I appreciated it" is used all the time in the US as a simple quick and really nice way to thank people.
