The word used to describe someone who is not married is "Unmarried" or "Single."

these are the terms given to people who are not married, not married can categorize those who are in a relationship but are not married, being single will determine both that you are not in a relationship therefore you cannot be married.

Of course, these days, just because you are not married, it does not mean that you are single. The world is full of unmarried couples who are not single! 'Single' means 'alone', or 'one'.
A spinster is an older woman - probably in her late 40s these days - who is considered to be beyond the normal age of marriage. This word is rarely used however as it seems old-fashioned. You would probably see this word in a Charles Dicken's novel, more likely.
A bachelor is a man (of any age) who has not yet married.
