アメリカで一般のツアーに参加したと思いきや、中国人向けのツアーでした。

ちょっと言い方を変えると自然に聞こえます。

直訳してしまうと:「Participants on the tour were all Chinese except for me」になります。これだと、冗長な言葉が多いので、シンプルに「Everyone on the tour was Chinese」と言えば、質問者様以外の参加者は皆中国人だったと言うことが伝わります。

"Apart from" is alternative way of saying "except".
次のように言えます。

These sentences are explaining that one was the only individual at a location that was not Chinese, saying that 'everyone except me' singles yourself out as the only one who is not or is.
by adding 'non' before something will make it 'not' 'none'. showing something that is absent.

The phrase "everyone else" is used to refer all the people in a group except you. Adding the word "sightseeing" to your sentence will help your listener know what kind of tour you are talking about. I hope that this helps. :)

By using the word "only" in the sentence you are stating that you are alone/the odd one out in a specific situation/circumstance. By saying "everyone on the tour was Chinese except me" you are stating that every other individual was of Chinese decent while you were the only "exception" meaning different one there.
"only" はここでは、それが自分だけであることを表します。

"everyone on the tour was Chinese except me" では「自分以外の人間は全員中国人だった」と伝えています。「自分だけが "exception"(例外)だった」ということ。
