①Our sales this week increased by 15% compared to that in the same time duration last year.
②The sales result this week reached 115% of last year's performance in the same week last year.
①「15％伸びた」に重きを置くなら increase by 15%という表現を使います。
「どれくらい伸びたか」比較するときの表現で、その度合いは by ～％ とbyを使います
② 主語を細かく特定するなら「今週の売り上げの結果」とresult や sales performance まで省略せずに入れるほうが具体的で英語らしくなります。
Our sales this week reached 115% of that of the week one year ago.
Our sales was larger than that of the week one year ago by 15%.
Our sales this week was 115% は正しそうに見えますが、
sales（数量）＝ 115%（割合）
という文になるので意味の上で正しくありません。
sales this week と比べるのは、昨年の週「の売上」という数量でなくてはなりません。
そこで、115% of that (=sales) of the week one year ago となります。
（なお、one last year's week は英語として正しくありません。）
また、この文であれば動詞は be動詞でも意味は通りますが、reached などの方がいいです。
もう１つは、115％というのは前年の週より15％多いことになるので、
larger ... by 15%
という言い方もできます。
（おそらくこの方が自然です。）
