"I will eat them over a couple of days"は
「数日間をかけて食べる」という意味です。
"I will break it up and eat them over a few days"はそのまま
「数日間に分けて食べる」になります。
どちらかと言うと一つ目の英文の方が自然な言い方です。
あと、"a few"と"a couple"の違いなのですが、
"a couple"は「２」で
"a few"は大体「３～４」になります。
ちなみに、
「数日間に分けて食べるつもりだが、いつも一度に全部食べちゃう」なら
"I try to eat a bag of potato chips over a couple of days, but I always end up eating them all in one sitting"がいいと思います！

はどちらでも 「数日間をかけて、少しずつ食べる」という意味になります。
a couple of days, a few days, a number of days, several days は全て「数日間」という意味になります（a couple of days だけは二日間を表すのが多いです。後"a few"より、"several"の方が数多いニュアンスになります。

いつも敷くつもり（少しずつ、長くするつもり）
spread (out) = 敷く
mean to +動詞 = ~ (する）つもり
