お礼が言いたいのですが、「Thank you for readjusting the lesson.」だとおかしいでしょうか?
それとも「レッスン日を」は「the lesson day」とかでいいのでしょうか?

Thank you for readjusting the lesson と言いますと「レッスンを再調整してくれてありがとう」という意味になりますので、「レッスンの内容を再調整してくれてありがとう」という意味でもとらえられます。
readjust は 再調整、という意味です。
それより、
Thank you for changing the lesson day.
(レッスンの日を変更してくれてありがとう)
又は
Thank you for adjusting your schedule.
(予定を調整してくれてありがとう)
と言うのがいいと思いますよ。

We use "re" in front of a word when we are saying that it something that has already happened before. Examples: rewrite, redo.If you use readjust, then it means that you already moved the lesson once before! If you haven't moved the lesson before this request, then you would just change the word "readjust" to "adjust". It would then be: Thank you for adjusting the lesson time.
You could just simply say "Thank you for changing the lesson time" when, in the future, you just like to change the hours and want to thank the teacher for understanding. You could use "Thank you for changing the lesson date and time." when you changed the lesson to a whole different day! Hope this helps and thank you for your question.

When you want to change your English lesson, and you want to thank your teacher for doing this and helping, then you can use one of these two sentences. They both mean the same, however, I would personally say that the first is a bit more formal than the second.
For example.
Thank you for understanding and changing out lesson to another day.
Not at all, it is perfectly fine for me.
