"I would enjoy" indicates that, given the opportunity, you will definitely try something.
"various" means different kinds of something.
"all sorts" is another way of saying different kinds, but means a large number without limit.
"any kind of" whatever, indiscriminately of.
"I would enjoy" は「機会があれば絶対にやってみる」というニュアンスです。
"various" は "different kinds of"（さまざまな）という意味です。
"all sorts" は "different kinds" の別の言い方ですが、これは「すべての」という意味です。

If you want to explain that you have a desire to sample different jobs, then either of the above examples is adequate. It would be quite normal to also add a reason why you should prefer to do that.
Eg: 'I want to widen my experience first and then make a decision about my career a little later.'
いろいろな仕事に挑戦してみたいと伝えたいなら、上記の文どちらも使えます。
なぜそのようにしたいのか理由も加えるのが普通でしょう。
