酸っぱいは sour を使って言います。
sour で「酸っぱい・酸味のある」と言う意味です。

it's not that sour の代わりに、it's not really sour とも言えます。
ーIt's not as sour as you might think.
「思っているほど酸っぱくないよ。」
もし「思っているほど甘くない」と言うなら
It's not as sweet as you might think.
のように言えますね。
