この場合 祖母 で grandmother は女性なので her を使いますが
男性の場合は his を使いましょう。
髪が艶やか と言うよりは 艶やかな髪を持ってると言う意味で
has shiny hair と表現するのが良いです。
若く見える は looks young と表現できます。
My grandmother's hair still looks radiant considering her age. Maybe that's why she looks so young.
この場合、次のような言い方ができますよ。

「祖母の髪は、歳の割にツヤツヤしています。そのせいか祖母は若く見えます」
considering one's age で「歳の割に」と言えます。
