日常会話です。家事って、ちょっとした工夫で、すっごくやりやすくなりますよね。「こんなに簡単な方法をこれまで思いつかなかったなんて、不思議！」。英語だと、何を主語にすればよいのかわかりません。It is surprising〜とか言うのでしょうか？？

おっしゃったように「It is surprising」を言うのは大丈夫です。

「It's」は「It is」の短縮形です。会話をするときに、「It is surprising」は「It's surprising」になるのは普通です。

因みに、カッコにある「that」はあってもなくても構いません。

例文：

It's surprising that I didn't know there was such a simple method for this until now!
