レストランでA(ローストビーフ)を頼んだけどB(真鯛のポワレ)にしたいです
洋服をこれに決めたけど、やっぱこっちにしたいです など

この場合、次のような言い方ができますよ。
ーI think I'll get B instead (of A).
「やっぱりAでなくBにします」

ーI think I'll go with this one/these instead (of the other one(s)).
「やっぱりそれじゃなくこっちのにします」
例えばジーンズだと複数扱いになるので、this oneでなくthese、other oneでなくother onesにしましょう。
