「飲みたくない」とありますが、好きな飲み物の話をしていて、ということですから、ここで言いたいのは、「コーヒーは好きなんだけど、お手洗いが近くなるから・・・」（お手洗いが近くならないのであれば、飲みたいんだけど）ということですよね？
そういう場合は「飲みたくない」を強調するよりも、「飲みたいんだけど」と言う方が、真意が伝わりやすい気がします。
ちなみに「お手洗いに行きたい」は、英語では「I have to go to the bathroom」です。生理現象なので、行きたいとか行きたくないとか希望を言っている次元ではなく、行かなければならないものだと解釈されるからです。
日本語を直訳して「I want to go to the bathroom」というと、「なんで？トイレに忘れ物でもしたの？」というような反応をされるので、ご注意ください（←私が経験しました）。

have to ~ は 「いやだけど～しなくてはいけない」という意味になることがほとんどですが、（ですので使う時は要注意！）
イヤじゃなくても、しなければならないことってありますよね。
need to~は、そういう含み（いやだけど）がないので、使い勝手がよく、学校ではこちらの方をメインに教えるべきだといつも思っています。
2つ目の例文は
「私は珈琲は、あまり頻繁には飲みません。もし、そうすると、トイレに何度も行かなくてはなりませんから」

（仮定法過去の分ですので、did や、would を使って、「本当はそうしないけれど、もしそうしたとすれば」という意味を出しています）
☆end up ~ing （～で終わってしまう…意志に背いて、～してしまう という意味のイディオム）
trips (trip は、「旅行」と思っている方がほとんどだと思いますが、travel なども含め、「移動」という意味に使われることが大変多い単語です。
特にtrip は、このようにトイレなどへの「短い移動」によく使われます。（「旅行」という意味でも、「短めの旅行」に使われます）
