今回は、uniqueとspecialを使って表現しています。
uniqueは、独特という意味、「ひとつだけのオリジナル」というニュアンスが強く、specialを使うと、特別だけど、数は複数あるように聞こえます。

「このワインの特別な所はなんですか？」

characteristic：特徴
酸味、渋味、ボディ、フルーティ感など、ワインの味を表現するのによく使われるこれらの特徴のことは"characteristics" と呼びます。この言葉をあえて使わなくても、上記例文2番目のように「そのワインについて（どういう味わいなのか）説明してください」と聞いても良いです。
