いろんな言い方がありますが、この3つを提案します。
シンプルに
Can I have extra veggies?
veggies→vegetablesの省略(vegetablesといっても構いません)
ラーメンはカジュアルなお店なのでveggiesと提案しました。
言い方違いで意味ほぼ一緒→
Can I have an extra helping of veggies/noodles?
extra helping→追加注文
(つまり、野菜の量、倍がいいとのことです)
Can you load up on the veggies?
load up→とにかく多めでお願いします
カジュアルな言い方です
友達同士、仲良い店長との会話ならこの言い方が良い。普通に言うのであれば、上の2つがオススメです。
Canの代わりに→Couldでも大丈夫です。ちょっと、丁寧に言いたいのであれば→CanをCouldに、VeggiesをVegetablesに

Could I have an extra helping of vegetables?
I would like a larger portion of vegetables, please.
Can I have extra vegetables, please?
- This is simple and polite way to ask for more vegetables.
Extra is another word for more
I would like a larger portion of vegetables, please.
- instead of asking a question you could just make a statement to say you 'would like' (polite way of saying 'I want') more vegetables.
A portion
- a helping, an amount. So, this is a good way of saying,
'I would like more vegetables (a larger portion)
Can I have extra vegetables, please?
これは、丁寧に野菜をもっとお願いする言い方です。
Extra は、moreと同義です。
I would like a larger portion of vegetables, please.-
質問をする代わりに、普通の文で、欲しいということを表す 'would like' (polite way of saying 'I want') more vegetablesと表現するのもいいでしょう。
A portion- 分量、助け.
つまり、'I would like more vegetables (a larger portion):もっと多い量の野菜が欲しい、という意味になりますね。
"Please, can I have extra veg."
Means you would like more vegetables that are normally served with the meal.
"Please, can I have an extra portion of vegetables." This asks that you be given double the amount of vegetables normally served.
"Please, can I have extra veg."
これは、ご飯と一緒にくる野菜を通常より欲しいという時に使います。
"Please, can I have an extra portion of vegetables."
これは通常の倍の量を出して欲しい時にいう言い方です。
"I'd like extra vegetables with my ramen please." & "Can I have extra veggies with my ramen please?"are both polite ways to ask if extra vegetables can be added to your ramen order.

ラーメンに野菜大盛でお願いします。
"Can I have extra veggies with my ramen please?"
ラーメンの野菜大盛にしてもらえますか?
どちらもラーメンの野菜を大盛にできるか尋ねる丁寧な言い方です。
Open by saying please as this shows a good level of politeness, as you are asking for something. Extra means that you want more than the regular amount.
Sometimes a particular side dish may seem very appealing and yet the portions may be on the small side. In that case, you can ask for, 'An extra portion..'
Alternatively, you could use the phrase: 'May I have some more ___'
For example, "May I have an extra portion of roast potatoes please?"
"May I have some more wine please?"
特定のおかずが非常に魅力的なように見えるかもしれませんが、量が少ないこともありますよね。その場合、「An extra portionを求めることができます。
あるいは、「May I have some more ___'」というフレーズを使用できます。

It is quite acceptable to ask for "extra ' portions of somehting in a dish,
this could come as "side dish" or just mentioning you "love" a certain element
of the dish...
"PILE ON the vegetables" is a fun and easy way to communicate this request;-))
一皿の量の"extra"(追加)をお願いすることは普通に受け入れられることだと思います。
これは "side dish"(付け合わせ)としてついて来たり、ただあなたのその料理の具材に対する"love"(大好きな気持ち)を伝える事でもいいかもしれません。
"PILE ON the vegetables"(沢山の野菜をのせてください)
と言う表現で楽しく簡単にお願いを伝えることも出来ます;-))
