You can apologise after the lesson or before. If you have a cold and know you may sneeze or cough a lot, you can tell the teacher at the start "I'm sorry if I sneeze/cough during the lesson, I have a cold".
If you want to apologise during or after the lesson, you can simply say "sorry for sneezing".

I'm sorry - to be more polite or formal you could say, "I apologize." This expression is used to express your regret because of something you have done.
Use this expression if something is your fault or if something happened that you could not control. For example, the train was delayed, and you were late for a meeting, etc.
The word ALL is used to talk about the quantity of something. Here, sneezing. By adding the word "All" you are acknowledging that you sneezed not a little, but a lot!
