★ 解説
（1）
日常会話でしばしば聞かれる表現です。
ここで使われている you も they も、誰か特定の人を指しているわけではなく、一般の人を指します。これを上手く理解するにはシチュエーションの設定が必要ですので、それを交えた解説を以下にします。
この発言はある物や商品の種類について話しているとします。
you は「誰ということではなく一般の人」、they は「その物や商品を作っている会社や売っている店」のことを指します。
つまり「多くの人は思うだろう、会社やお店がそれを持っている（製造、販売している）だろうと」ということです。
しかし英訳例ではこれを仮定法で言っているので you にも they にも助動詞 will の過去形 would を使って、「当然と思っているから、わざわざ思いを巡らせることはないだろうが、彼らがそれを実際には持っていないけど、持っていると思うだろう」ということです。
（2）は上記の表現を関係代名詞節にして名詞 something を修飾したものです。
something「何かもの」that you would think they would have「彼らが持っているだろうと人々が思う」
have の目的語を関係詞の that にし、先行詞の something を修飾しています。

"Unlikely" means there is a very small chance of it happening.
It is unlikely to rain. or it is unlikely the shop will stock it.
If you are in a situation where a shop does not have something you can say. "you think that they would have it."
