「The orders are rolling in」というのは、「注文がどんどん来ています」という意味です。

  • A lot of orders are [keep] coming in for this item.

  • Overwhelming demand

Supply' and 'demand' are the economic terms to describe the activity of buying and selling. If a lot of people are buying something then there is a 'high demand' for that product. "There is ncredible demand for our product." If the dmand increases even more and businesses can not supply all the orders, then there is 'overwhelming demand.' If a business has difficulty keeping up with the orders then you may say: "We are swamped with orders"
There is incredible demand for our product.

  • We have a lot of orders. It will be sold out soon.

We have a lot of orders. It will be sold out soon.

When a product is being ordered by a lot of people, you can say that there is an order rush or you can say that the product is in great demand. For example, you can say: -There is usually great demand for every new iPhone that is released every year. -There was an order-rush in September, so the supplier of iPhones told me I had to wait two weeks before I can get my iPhone.
There is an order rush The product is in great demand.(その商品には大きな需要がある)と言うことができます。 -There is usually great demand for every new iPhone that is released every year. -There was an order-rush in September, so the supplier of iPhones told me I had to wait two weeks before I can get my iPhone.

"selling /going like hot cakes!" - Idiomatic, to be disposed of very quickly and effortlessly, especially in quantity. As in "These new spinners are selling like hot cakes" "Orders are flying in!" - A high quantity of demand for 1 or many products, as in "Orders are flying in and we are struggling to meet demand!" "High demand" - this is good for negotiating with another person/company, you can say "The product is in high demand and we are running at full capacity to fulfil the orders, so I can only offer a price of $X" This will allow you to dictate the price and possibly make more profit.
"selling /going like hot cakes!" "These new spinners are selling like hot cakes" (これらの新しい脱水機は飛ぶように売れています) "Orders are flying in!" "Orders are flying in and we are struggling to meet demand!" "The product is in high demand and we are running at full capacity to fulfil the orders, so I can only offer a price of $X" (この商品は需要が高く注文に追い付くようにフル稼働しています、ですのでXドルでしかご提供できません) これで価格を提供して収益をもう少し上げることが出来るかもしれませんね。

We can say that there is a massive, "order rush," to explain that there are a lot of people trying to order the same thing all at once. We can also say there is a large, "flood or influx," of orders in a more expressional way to mean the exact same thing.
