Let's all go for a curry on Friday night!
Being a curry lover I understand your confusion. With the word "curry" it incorporates all of the different dishes/plates. Personally, I go for a Madras, but it can get very confusing as there are so many different names for the types of curries. With a lot of curries you can not tell what they are by look but on taste. A lot of curries have been adapted to the British palate/taste due to the Colonial history. It is automatically associated from being of Indian origin, however it covers Asia as well (anything in a spicy sauce) i.e. Katsu curry - Japan, Chicken curry - Chinese.
"The menu has Madras, Korma, Balti, Naan Bread." (to the waiter) "I'll have a korma please."
With friends if you like this food and want to arrange you can invite by saying "Let's all go for a curry on Friday night!"

You can use the word 'curry' in English to refer to all the dishes containing curry.
However, since there are many variations of curry dishes in different countries, if you want
to specify the
origin of the dish, you can add an adjective. For example, Thai curry, Japanese curry, Indian curry, etc.
Additionally, you can use the word 'from' + country name: 'This is an adaptation of yellow chicken curry from India.'

A 'curry' is a single dish that is eaten and served as 'Indian food' and eaten in an' Indian meal'
If you were referring to different dishes as well as curry then you would say 'Indian food' which means the food comes from India originally. If you are eating the food then you would call it an 'Indian meal' so you could say 'We went for an Indian meal last night and a lot of us had curry'

Curry has a strong identity as Indian food; therefore, we can use either term to describe it. Typically, curry is spicy to some degree and contains a lot of flavor from the various spices used, used as cumin, cardamom, turmeric, saffron, etc.
Japanese curries tend to be milder and less colorful, but still delicious!
If you want to be more specific when describing the food, you can put the country name before "curry", for example, Japanese curry / Korean curry / Indian curry / British-Indian curry
