まず最初の例文はほぼ直訳になります。
”It's difficult to raise an example", まさに “挙げる” という言葉の直訳、英語でもそのまま、”raise" と表現します。
また、この部分の ”raise" だけを熟語にして、”come up with" という方法もありますね。
こちらの方が直訳ではないのでより気楽なニュアンスがあるカジュアル版になります。
また、三個目の例文はパターンもすっかり変わって、”I don't know how to..." と切り出すことで、”～が難しい” という言い方を、”どうやったら～するのか解らない”、というニュアンスは同じになるよう維持した違い言い方になります。そしてこのパターンでしたら一番自然な流れとなる動詞の部分は、”give" を使うといいですね。

解説：It is 〜 to do= 何かをするのが〜である、という構文です。
citeは引用する、という意味です。
2.It's difficult to make an example.
例をつくるのが難しいです。
解説：引用する、という上記の単語がわからなくても、makeという簡単な基本単語で表現してみました。
3.I can't think of any examples at the moment.
今、私は例を思いつくことができません。
解説：違う発想で訳してみました。think of〜は、〜を思いつく、という意味です。think aboutは、〜について考える、少し塾考する、というニュアンスなので使い分けが大丈夫です。at the moment は、今この瞬間では〜、という意味です。
いろいろな訳し方がありますが、自分の知っている英語表現や文章を用いて、工夫して訳してみましょう。答えは調べて見つけるのではなく、自分の英語で作れる、と自信をもってがんばってください。
My mind has gone blank' is a common and popular phrase which explains the moment when you are trying to think of an example or even the detail about a situation and you cannot bring the answer to the front of your mind. We use this when we do know the answer, and we do have examples, but due to the pressure of being asked, or because of forgetfulness or distractions, you just cannot come up with the answer and articulate it at that moment.

The two sentences you see provided above are terrific ways to express to your listener that it is difficult to think of an example. In the first sentence you will notice the phrase come up with. This phase means to think of something, especially if we are under pressure. This phrase is common in our everyday conversation and it would make a great addition to your vocabulary.
二例とも、例を挙げるのが難しいことを伝える言い方です。
一つ目の例には「come up with」が使われています。このフレーズは「（特にプレッシャーのある場面で）～を考えつく」という意味です。日常会話でよく使われるフレーズですから、語彙に加えておくといいと思います。
It is hard for me to make a good example that will be easy to understand.
▪ It is hard for me to make a good example that will be easy to understand.
By saying "it is hard" indicates that you find it difficult.
The sentence is indicating that you find it difficult to make a good example that will be understood easily.
