「values」、「perspective」、「way of thinking」はこの場合で基本的に同じの意味です。
「価値観に触れ」は「To be exposed to their perspective」です。
「価値観を身につける」は「to understand their values」あるいは「to embrace their values」です。後方の「embrace」のほうの意味が強くて合っているでしょうか。
I want to travel to many countries whose culture is different from Japan's to experience new perspectives.
「I want to stay in several countries with different values from Japan and I want to touch on the values of the area and learn them.」は、ネイティブの人が必ず意味が分かります。意味を述べるということとして、全然問題ないです。
でも、私だったら、I want to travel to many countries whose culture is different from Japan's to experience new perspectives. と言います。
海外に滞在したいことについて話す時、価値観だけじゃなく、一般的に母国とは違う文化を持った国の話になります。それでcultureという言葉を使いました。
