会議の項目 (item) に書き込む場合は一言 Gratitude でもokかと思いますが、話し始め等には We would like to extend/express our gratitudeという形で extend/express を用いると丁寧です。そして、〜を代表して、という意で on behalf of --- を用いることが多いです。
（例えばボスがチームを代表して何かを言う際や首相が国民を代表して何かを言う際など）
→ On behalf of the team, I would like to express our gratitude for your enormous contribution. （チームを代表して、あなたの多大なる貢献に感謝の意を表明したいです）
ここでの「感謝」は gratitude を使用しましたが、appreciation でももちろん大丈夫です。
gratitude はフォーマルな意味が強いです。
