家族間のカジュアルな会話であれば What's for dinner?がよく使われます。
軽い[夕食](https://eikaiwa.dmm.com/uknow/questions/51271/)の場合、dinnerでは無く、supperと言うこともあります。
留学中、よく私のホストマザーが夕ご飯が出来ると"Supper's ready!"と言っていました。

What are you cooking for dinner?ですと夕飯は何を作るの？と言う意味になります。
一つ目は、「お母さん、夕飯は何を作る予定なの？」っていう感じになります。
もし「おかず」ということにフォーカスするのであれば、side dishという表現が適切でしょう。
What kind of side dish~? で、「どんな種類のおかず？」という意味になるので、2つ目の例文は、「夕飯のおかずはどんな感じ？」という意味になります。
'What.s on the menu this evening?' Obviously, at home there is no menu as in a restaurant, so this is a playful question, imagining your mother is a chef in a busy restauarant.
