I didn't understand というと 「理解できなかった、理解しなかった」という意味で、I couldn't understand ですと「理解することができなかった」といったちょっとしたニュアンスの違いですが意味は変わりありません。
I didn't understand half of what was said というと「言われた半分の事は理解できなかった」という意味です。ちなみに「半分以上」というのであれば I didn't understand more than half of what was said となります。more than half または over half でも大丈夫です。
I couldn't understand most of the conversation というと「会話のほとんどが理解できなかった」となります。
