自分で作った文は "in"と "a"が "stay"と "more"の間に必要なので一つ目の文になります。
二つ目の文はもっとネイティブな言い方です。
"If I had the money"の "the money"とは 必要なお金、（高いホテルに泊まれるために）
”the”という言葉の代わりに "enough"という言葉も使えます。"If I had enough money" 「もし十分お金あれば」
もっと高いホテルは確かにもっといいホテルなはずなので "a more expensive hotel"の代わりに "a nicer hotel"を使います。
I would stay in a nicer hotel if I had more money.
If I had more money, I would stay in a more expensive hotel.
