何かの向きを変えるときは turn をよく使います。なので、turn the shower head the other way で「シャワーヘッドの向きを反対に向けて」となります。

leave はあるものを…のままにしておく、という意味があります。なので Don't leave the shower head like that. でシャワーヘッドが今ある状態のままにしておかないで、と言っているわけです。
