Could you say it again?が一番無難な言い方だと思います。
ほかにも
Pardon?
Please say it again. 「もう一度言ってください。」
I couldn't hear you. 「聞こえませんでした。」
などなどたくさんあります。
Could you say it slowly? 「ゆっくり言ってくれますか？」も覚えておくといいかもしれませんね！
"couldn't hear you" は雑音などがあって聞こえなかったという意味合いです。
"couldn't catch what you said" は相手の話し方がはや過ぎたなどで聞き取れなかったというニュアンスです。
もう一度言ってもらいたい場合は
Could you say that again?
Could you repeat that?
と続けます。
What did you just say?
今なんて言いました？
Sorry, I couldn't catch it.
すいません、聞き取れませんでした。
Could you say that again?
もう一度言っていただけますか？
かなり使えます。
ぼくも最初はこればかり言ってました。
沢山答えはありますが、私の推奨するのは：
「① Sorry, what was that?」（すみません、何て言いました？）
「② Come again.」（もう一度言って）
「③ I didn't get that.」（聞き取れませんでした）
いずれもオンライン英会話で使えると思います。

とても丁寧な言い方です。
繰り返す＝もう一度同じことを言うということですね。
I couldn't catch up with what you said.
「catch up with」で追いつく、という意味があります。
あなたの言っていたことに追いつけなかった、つまり聞き取れなかったってことですね。
I didn't get that. Please repeat what you just said', would easily make the teacher understand that you did not hear what he/she had just said and would immediately repeat it, or, say it more clearly.
Your politeness by adding the word 'please' also matters a great deal.
In your second request, you start by apologizing using the adjective 'sorry'.
You are impliedly saying to the teacher that you are sorry for not having heard what he/she had just said.
And then you politely ask: 'Please repeat what you just said'.
The teacher will be more than happy to repeat what he/she had just said.

こう言うと先生は、あなたが先生が言ったことがわからずすぐ繰り返して言ってほしい、またはもっとハッキリといってほしいということが容易にわかるでしょう。
please と言うことで丁寧な感じが出ます。
２つ目のお願いの仕方では、sorry という形容詞を使って謝ることから始めています。
先生が今言ったことが聞こえなかったことに対してすみませんと言っていることがわかります。
そして丁寧に、'Please repeat what you just said.' とお願いしています。
先生は喜んで、今言ったことをもう一度言ってくれるでしょう。

①と②は、「相手の言っていることが聞き取れなかったり、内容が理解出来なかった」場合の丁寧な言い方です。ビジネスのシーンでよく使います。
直接、「聞こえない」「分からない」という表現をしていません。また、自分を卑下する表現も使う必要はありません。
③は、「もう一度お願いします。」という意味です。pleaseは、使わなくてもいいです。

- In this sentence you are apologizing for the fact that you didn't hear what your teacher said.
"I didn't get that, may you repeat it please?"
- In this sentence you are telling your teacher that you couldn't hear what he/she said. In the next part of the sentence you are requesting that your teacher please repeat what he/she said.
