「動物性」はanimalと言います。そして、「出汁」はstockやsoup stockと言います。でも、そのままanimal soup stockと言えません。animal-based soup stockかsoup stock made from animalsはより自然ですが、animalじゃなくてmeatの方がいいと思います。
