一般的に「と思う」＝「(I) think」ですが、このような状況では「I feel like」を使う場合は多いです。
「When I see someone giving their best, I also feel like I want to give my all.」になります。
もちろん、文末に「give my best」も言うことが出来ますが、「give my all」の方が自然です。「giving their best」の代わりに「doing their best」を言っても大丈夫です。
