この文では、so(~過ぎる)、couldn't(できなかった)、even(~さえ)という強調を表す語があります。
関係代名詞のthatを省略してもいいです。
I was so busy today, I skipped lunch.
→今日は忙しくて昼ごはん食べる暇もなかった。/今日は忙しかったから、昼ごはん食べなかった。
skip には「~を抜かす, 省く」といった意味があります。
skip lunch で「昼食を抜く」となります。

食べる暇もなかった は「食べる暇さえなかった」ということですので、
~さえ というeven を使って言い表します。

この後半は、例文2のようにtime to have/eat lunch と言い換えられます。
(食べる は have/eat どちらでも可)
また、よく見て頂くと、例文1と2では、even の位置が違いますが、
例文1の方が普通の言い方ですが、~さえ をもっと強調して言いたい場合には
例文2のように、I even didn't have time~ と even を先に持ってきます。

Again, if you got to be very busy because there was a lot of work to do, you might not have noticed that lunch time had come and gone.
"Skipped"or "missed" is a different way to say that you did not have time for lunch
"No time"you did not have time to eat
"Swamped"means that you had a lot work of to do and you didn't have time to eat
To skip something = not to do something, to miss something, to avoid doing something.
"Let's skip the formalities and get straight down to business."
To be pushed for time = not to have time to do anything due to a heavy schedule.
"Sorry I'm just too pushed for time to stop and talk. Let's catch up with one another a little later this evening."
To skip something =しないこと、何かを忘れること、何かを避けること、
例 "Let's skip the formalities and get straight down to business."
To be pushed for time = スケジュールがタイトでそれをしている時間がない、という意味。
例:"Sorry I'm just too pushed for time to stop and talk. Let's catch up with one another a little later this evening."
You can use any of the above statements. You can also express this in other ways :-
1. I was swamped today, I didn't have time to eat lunch.
2. I don't know where the time went, I missed lunch!
上記の言い方のいずれかを使えます。
他の方法でこれを表現することもできます:

今日は慌ただしかったので、昼ご飯を食べる時間がなかった。

時間がどこに行ったのかわからない(くらい忙しかった)、昼食を逃してしまった!
Unnoticed means without being seen or noticed. I would recommend to use the first one because it's a more casual way of saying, the second one is a more formal version.
