When you are essentially letting someone down, in a nice, polite manner it would be good to say sorry. Even if it is not your fault and it is the customers fault for turning up at the wrong time, it is always good to just apologise as it then makes the customer feel better and they will more likely turn up when the shop is open.
Offering your help also when they do return would always be a benefit as it makes the customer feel like you wont forget them and will make them a priority when they do return.
