形容詞messy以外にも、untidyが使えると思います。
untidy：散らかった、雑然とした
untidy の反意語として、tidyがありますが、untidyはtidyに否定の意味のunがつき否定語となっています。
・tidy：整頓してある、きちんとした
un (～でない)＋tidy(整頓してある) → untidy整頓していない、散らかった
【例】un (～でない)＋happy(幸せ) → 幸せでない、不幸な
ちなみに今回のun のように基本となる単語の前につくものを接頭辞といいます。
日本語で言うところの漢字の「さんずい」や「にんべん」などのへんやつくりと近いと思います。
今回は簡単にしか触れませんでしたが、接頭辞などを覚えると漢字のへんやつくりを覚えるのと同じで単語の意味を推測しやすくなるので、単語を多く覚えるかたには良いと思います。
例）My car is untidy.
「私の車は散らかっています。」
例）There is untidy in my car.
「私の車の中は散らかっています。」
untidyは「整頓していない、散らかった」という意味なので、自然に車の中というイメージとなるので、My car is untidy.でも車の中が散らかっているというニュアンスになると思います。

my car のイメージですが、おっしゃる通り、”I am sorry, it is dirty inside of my car.”
の文章の方が、どこが汚いのか限定された文章となり明確に相手に伝わります。
”I am sorry, my car is dirty.” ですと、この言葉を発する状況によって意味合いが変わります。
車内がぐちゃぐちゃで車外がぴかぴかだった場合、車内のことを指しますし、車外にいて、”I am sorry, my car is dirty.” と言えば車体に泥がついているなどしている状態だと、言われた相手は理解すると思います。
そこで、おすすめなのですが、車の中が物が散らかって汚い場合、mess「散らかり」という言葉を使うとinside of my carを付けても付けなくても、物が散乱していて混沌としたイメージとなりますので、必然的に車内について言及しているのだということが想像できます。

"A mess" is a dirty area or something the untidy. So when you want to apologize in a casual way for something being messy, like a car, you can say, "Sorry for the mess."
"a mess" は、汚いところ、片付いていないところを表します。

There are many ways to express this. You could simply use the first one which would be the most common way to say this, otherwise you could use the second option where the use of the word 'state' is used in a negative context to show it is not good.
If someone says 'look at the state of his car'that means it is in a bad condition or a mess. By saying sorry for the state of your car you are implying you know it is a mess.
"I am sorry the car is such a mess"（車の中が散らかっていて、ごめんなさい。）
"I am sorry about the state of my car"（車の中の状態が悪くて、ごめんなさい。）
"I apologize for the mess in here"（ここが散らかっていて、ごめんなさい。）
たくさんの言い方があります。1番目が最も一般的な言い方です。
その他ですと、2番目は"state"というネガティブな文脈で使われる単語を使い、良くない状態を表現します。
もし誰かが"look at the state of his car"と言った場合、それは車の状態が悪い状態、あるいは散らかっていると言う意味です。
"sorry for the state of my car"と言うことによって、車の中が散らかっていて、ごめんなさい、と言うことができます。

'I'm sorry but my car is messy inside' or 'I'm sorry the inside of my car is messy'
