It's hard (for interviewers) to find out who the person is in a few interviews.
It's difficult to know his/her personality in a couple of interviews.
「〜することは(人にとって)難しい」は、"It's hard (for 人) 〜" "It's difficult (for 人) 〜" と表します。カッコ内の "for interviewers"(面接官にとって)は、ここでは表現上、特になくても良いでしょう。
"find out 〜" は「〜を知る、〜を見抜く」ということを表し、他に "know" "figure out" "see through" なども、同じ意味で使うことができます。
"find out who the person is" は、「その人がどういう人間かを知る」となります。
"personality" は「人柄、性格」です。
"in an interview" は、「面接で」を表します。「数回の〜」と言いたい場合は、"a few 〜" または "a couple of 〜" を前に付けます。
