動詞で使う事が多い言葉ですが、「待ち」と言う意味で名詞として使う事もあります。
The waiting time is long =待ち時間が長い
waiting time =待ち時間
waitと同じ意味ですが、こちらの方が聞き取りやすいです。
The waiting time here is longer than I had expected / hoped for.
Excuse me, how long do you think I will have to wait for my turn?
I have been waiting a long time; can you tell me if it will soon be my turn please?
The first answer is a polite way to say that you have waited longer than would have liked.
The second answer is a polite way to ask the time that you will still have to wait.
The third answer could be used in a situation where you have been waiting a long time, & would like to politely but strongly ask when you will be seen.

There is a long wait or you have been waiting for a while are also common phrases.
If you are updating someone on your situation you can use the phrase 'I'm still waiting'.

The two sentences you see are great ways to express that you are waiting for a long period of time, whether that be in the hospital or in a hair salon. "How long is it gonna be before I get seen to? "- This is the most polite out of the 3. Normally the person will give you an estimated time. Seen to as in 'dealt with'.
"This is taking forever! How long should I wait?" - this pushes them to act quicker & that you're fed-up of waiting. A bit of psychology with this phrase, but if you are paying for a service then 'customer is King/Queen'. (may be deemed as rude).
"This is ridiculous! How much longer do I have to wait?"- this tells them that you are "not a happy bunny"& maybe angry/frustrated. They may give you a time frame. (maybe deemed as rude & you might be asked to leave, but, it could work for you. NOTE: only use this if you are ready to leave anyway!)

A 'queue' is both a noun and a verb. When we 'queue' up, it means we are waiting in line for something e.g. queueing up for the bus. It also a noun - we can say we are waiting in a queue e.g. this queue is very long.

You describe a pretty common situation when we have to wait. Your example is a good one and you can use it without hesitation. Although, I wrote to more sentences which you could use either.

To 'take a number' means taking the number that will tell you what number you come in the queue, usually the numbers are written on a sheet of paper which is allocated or assigned to you.
For example, if the next number available is 5, then this means you are number five in the queue.
"We have a lengthy waiting period today, please be patient."
"The queue will be a while today, please be patient with us."
