英会話のレッスンで、毎回「理解できてる？」「何か質問は？」と3~5回ほど聞かれます。その度に「OK」「I could understand so far」などと答えているのですが、バリエーションがなくて会話が単調になってしまう気がして困っています。
いろいろな言い方を持っておきたいです！

Yujiさんの最初の例文がよく聞く、標準的でとても自然な表現だと思います。
他にもいろいろあると思いますが、同時に工夫するには色々ある同じ単語の違うバリエーション、順番を変えた形が大半になるのではと思いますね。
ひとつ、まだ紹介されていないのが、〝I folow you” 。直訳すると〝ついていけてます” という意味ですが、これもまた〝理解できています” という意味でよく使う表現の一つですね。また相手に確認するときも〝Do you folow me?”（ついてきてますか？ → わかりましたか？）とも言います。
また、単純に〝got it” （わかりました）というのもまた英語ならではの熟語、これはＹｕｊｉさんの最初の例の後半の部分だけを言った形となりますが、三個目の例は前半の部分だけでもまたＯＫ，〝Yes, pretty much”、これらは相手からの質問があってこその簡単な応答例となります。

「だいたい分かりました」の表現ですが、
「roughly understood」
「almost/nearly understood」
で表してみました。
もっと具体的に、丁寧に言う場合は、
「Yes, I mostly understood today’s lesson.」
「Yes, I could manage to understand today’s lesson.」
「Yes, I was able to understand today’s lesson.」
と表現することもできます。

I almost got it. は、日常的に「まあまあわかったよ！」と軽くいう場合に使用します。
「多分わかった」と言いたい時は、I think I got it. とも言います。
（この場合の 「got it」 は、「わかった！」という意味で使用する口語表現です。）
もう少しフォーマルに言うのでしたら、
I almost understood it.（おおよそ理解できました。）とも言えます。
ちょっとかたい感じですが、この場合は「おおむね真意がわかった」どいう深い意味もこめられているので、まじめな話や相談事を受けた時とか、説得された場合の返事をする場合にはこちらを使うといいかもしれません。
また、I perhaps understood what you have just said.
（今言われたことは、多分わかりました。）と、聞いたあとにコメントする場合でしたらこんな表現が使えますし、
I can presumably understand what you are trying to say.（何をいわんとしているのか、多分わかります。）というと、同調するとか、「多分わかるよ」というように相手が意図していることが伝わったという確認の意味にもなりますね。

"So far so good"
This means that to a certain point in the lesson you understand what the teacher is explaining.
"For the most part I understand"
This means that you understand most of what has been explained to you but there are still some areas you are not entirely sure of.When you say this you teacher will most likely ask which areas were difficult for you understand and proceed to explain.
"I think I get it but...(insert uncertain area)"
This means that you think you get the point of what the teacher is explaining.You have to explain the specific area that prevents difficulty and perhaps ask your teacher to explain or elaborate some more.

説明の大部分は理解しているけど、完全には理解できないところが依然あるということです。
このフレーズを先生に言うと、先生はおそらくどの部分が分かりづらく、説明をしたら良いかを尋ねるでしょう。

そのことは分かったけど、…が（よく分からない）
先生が説明しているポイントは分かったということです。よく分からない具体的なところを説明し、おそらく先生に更に詳しく説明するように頼まないといけません。

Of course, you could also explain in terms of the percentage more exactly how much you understand.
"I understand about 50% of the article."
"I can get my head around about 30% of the text. It's really hard for me!"
The general meaning =主題、ディテール、使われている単語やフレーズで定義される内容の大半を理解すること。
もちろん、もっと詳細にいうためにパーセンテージで表しても良いかもしれません。
"I understand about 50% of the article." この記事のだいたい50％はわかったよ。
"I can get my head around about 30% of the text. It's really hard for me!"テキストの30％しかわからなかった。すごく難しいよ。

If you want to express that "you understand mostly" you could use any of the following expressions:-
I understand most of it.
I understnad almost everything.
If there are a few things that you don't understand you could say:-
I understand most of it, but I don't understand"XYZ"
「だいたい分かりました」は次のように言えます。
I understand most of it.（だいたい分かりました）

少し分からないところがあるなら次のように言えます。

Instead of saying I could understand so far you should say I understand so far. Depending on how the teacher asks you you can use any of the phrases above.
