1) I know that word but I can't use it in a conversation.
「その単語を知っているけど、会話で使えない。」
もし practical を使っていうなら、下のようになるかと思います。

「その単語はなじみ深いが、普段によく使う単語ではない。」
=I'm familiar with that word but it's not the kind of word I would really use. とも言えます。

「その単語知ってるけど使えない」という意味です。
２）I know that word, but I can't use it in conversation.
「in conversation」を加えると「会話で使えない」という意味になります。
３）I know that word, but I don't know how to use it in conversation.
「can't use」の代わりに「don't know how to use」と言えば、
「使い方が分からない」ということが伝えられます。
「practical」についてですが、「活用的」という意味ですので、この場面には合わないと思います。
