あまりないって英語でなんて言うの？

「日本にはパイの店があまりない」
"There aren't many pie shops in Japan" など

キッシュなどたまに店で見かけたりしますがパイの生地を
使ったパイの店はもっと増えてほしいです。

「あまりない」を英語にしたら、"there aren't many" や "there aren't a lot of" と言います。この2つの英単語は「少ない」を指します。

例文：
There aren't many Americans who live around here. 「この辺に住んでいるアメリカ人があまりない。」

There aren't a lot of Mexican restaurants in Saitama. 「埼玉にはメキシコのレストランがあまりない」

You don’t see many....は 「あまりたくさん見かけない」という意味です。

例えば:
You don’t see many Mexican restaraunts in Japan.
(日本でメキシコレストランてあまり見かけないよね)。

You don’t see many New York style pizza restaraunts in Japan.
(日本でニューヨークスタイルピザのレストラン あまり見かけないよね)。

「あまりない」を英語でいうと 'not too much' と言えばいいです。
「日本に～はあまりない」を次のように言える
単数の場合か数えられない場合はたとえば
「日本に犯罪はあまりない。」
'There isn't so much crime in Japan.'

または複数の場合はたとえば
「日本にロータリー交差点はあまりない。」
'There aren't so many traffic roundabouts in Japan.'
