日本語の「お酒を断つ」には、「完全にやめる」というニュアンスはないですよね。
個人的には stop がいいかなあと思います。
stop は「やめる」という意味ですが、再開する可能性を残します。
decide to do は「…しようと決心する」です。
「stop drinking（お酒を断つ）に to（至る）することを decide（決心する）」。
