プロジェクトのテーマは何にする？って英語でなんて言うの？

ご質問ありがとうございます。 直接的に訳すと「What should we do for our project's theme?」となりますが、この状況で「project's theme」はちょっとおかしいです。「What topic should we do for our project?」の方が自然だと思います。 因みに、「The due for a group assignment is coming very soon but we haven’t do any.」はほとんど良いですが、「The due date for the group assignment is coming up very soon but we haven't done anything yet.」の方が分かりやすいです。 ご参考になれば幸いです。

この場合、次のような言い方ができますよ。 ーWhat do you want to do our project on? 「私たちのプロジェクト、何についてにする？」 ーDo you have a theme in mind for our project? 「私たちのプロジェクトだけど、テーマの案がある？」 ご参考まで！
