Moment means a short amount of time.
"I will be with you in a moment.' explains you will serve/help them very shortly.

would like to は「〜したい」の控えめな言い方で、フォーマルな場では want to より好まれます。
to be sure は上記の直訳のように「確信を持つために」です。このように言うことにより、即答を避けて慎重になろうとしていることを伝えられます。もちろん、元々あたふたしているのであれば、相手には「コイツ分かってないな」と思われてしまいますが、ちゃんと確認すると言っているので、誠意を示すことができます。

電話などでは、3番目の文章がこれも定型です。

"Please wait I thank you for your patience" the first part is asking a person to wait, and thanking them for their patience is a way of acknowledging that they are in a difficult situation and have been waiting. Many people will appreciate the acknowledgement.
"Hold on" is an informal way of telling someone to wait, this should only be used outside of a professional situation and if the person being told to wait has already been argumentative and short tempered.
