・What is your favorite quote?
「あなたの好きな名言は何ですか？」

quote(s) は「引用文」という意味もありますが、「格言、名言」という意味もあります。"Time is money （時は金なり）" など、昔から使われている有名な格言、ことわざは proverb とも言います。
名言の他の言い方としては、wise sayingも使えると思います。
・wise(形容詞)賢い、分別のある
※知識や経験を元に賢明な判断が出来るという意味での「賢さ」となります。
・saying(名詞)ことわざ、格言、発言
よって、wise saying で 賢いことわざ、格言となります。
wise sayingだと名言というよりは、日本語で言うところの「金言」に近いと思います。
ちなみに金言は金のように価値が高い言葉のことです。

"Do you have a favorite quote?" You could also say "phrase" instead of quote because a phrase can also mean something taken out of a book.
"What 's your favorite saying?" works the same way and we call it a "saying" simply because it's something that people often say in a form of advice.
So it usually relates to something wise.
For example:
Friend: What's your favorite saying?
Me: Saying?
Friend: Yeah, you know...something that people usually say, like giving you advice.
Me: Oh! I like that saying that goes something like "Give a Man a Fish, and You Feed Him for a Day.

"Do you have a favorite quote?"quoteの替わりに書籍の内容からとった文など幅広い意味を持つ"phrase" を使うこともできます。

If you ask someone which quote they prefer it will be nice to also share your favorite. If you prefer something it means if you are given a choice you will choose that particular option. For example, I prefer ice cream with peanut butter to ice cream with chocolate.
