「一目惚れ」を違う言い方で表してみますね。鈴木さんのおっしゃっているように、fall in love with A(人)で「A(人)に恋に落ちる」という意味になります。一方「一目惚れ」という名詞系を単語にするとすればlove at first sightです。このat first sightという副詞句を使ってみました。
仮に「あなたを一目見たときから」と強調したいのであれば、鈴木さんのようにthe first time when I saw youを使った方がいいですね。手紙は自分らしさが出ますので、言葉選びにはじっくり時間をかけたいですよね。
