He/She eats like a horse, as much as 1 ordinary adult eats.
「大食い」というのは英語では eat like a horse と言います。 eat like a pig という表現方法もありますが、こちらは大食いでも食べ方が汚い大食い、いわゆるむさぼり食うというような感じの表現になります。
さて、
1番目の英訳例ですが、「私と同じくらい、彼・彼女は大食いです」と自分と同じくらい食べる場合、as much as I eat で表現します。
2番目の英訳は「1人の大人が食べる量くらい、彼・彼女は大食いです」と一般的な大人が食べる量を表現します。 が、難しいのが「一般的な大人の食べる量」とは、どれくらい？ということなんです。
ですので、例えば僕の場合ですと学生の頃、マクドナルドで

実話です（＾＾；） というように、He/She eats like a horse, y'know, he orders/eats.....と1度に何をどれくらい食べるかを詳細に表現すると「大食い」が明確になり、Wow!!という反応になる訳です。
