You can use "in my mind" to express「私のイメージでは...」in English. For the examples you gave:
- *In my mind, there are a lot of cowboys in Texas.
- In my mind, Chinese people are all rough.
You can also use "my idea of..." or "the image in my head..." in the same way:
- My idea of Texas is that there are a lot of cowboys.
- The image in my head of Texas is that there are a lot of cowboys.
*This is actually true! It's their job to keep cows inside their fences. ^^
