Both of these answers are a good way of saying to someone that you are excited to see them again.
When you are 'really looking forward' it means that you are very excited about something and are thinking about that thing lots.

When you're emailing someone about looking forward to meeting up with, then you can say:

'I can't wait' means you are really looking forward to something and are counting down until it happens
What you say does depend on exactly the relationship you have with this person. If you are 'counting the days' until something happens then it means you are really looking forward to that time. You could make a happy prediction about your reunion as in the second example sentence.
