捉えるって英語でなんて言うの？

「話の本質を捉える」とは決まった表現で 'to grasp the meaning' と言います。
動詞の 'to grasp' は「捉える」か「掴む」という意味です。
ですから 'to grasp the meaning' は「意味を捉える」と直訳されます。

例：
I always try to grasp the meaning of the message.
メッセージの本質を捉えるようにしています。

インフォーマル日常会話では 'to get' もよく使います。
例えば：
