I bet ... は「きっと...でしょう、[...にちがいない](https://eikaiwa.dmm.com/uknow/questions/76519/)ですね」と強い確信をあらわす口語表現です。よく使います!
もともと bet は「お金を賭ける」と言う意味です。そこから「...ということは賭けてもいい」=「間違いないという確信がある」と意味が広がっていったのでしょう。
can't wait (to ...) は「[楽しみ](https://eikaiwa.dmm.com/uknow/questions/36224/)でもう待ちきれない」を意味する定番中の定番フレーズです。
look forward to something も有名で「...を楽しみに待つ」という意味合いです。
