文脈により、使える言い方が少し変わります。
例１：
"Apparently, Japan is twice as big as the UK!"
"Really? I never knew that!"でもいいし、"Really? I didn't know that!"でも大丈夫です。
Neverを入れると、「[今まで](https://eikaiwa.dmm.com/uknow/questions/33998/)知らなかった」ことを相手にもう少し強く伝えられます。

例２：
"Excuse me, you can't smoke in here."
"I'm sorry, I didn't know (that)."を使います。
"I never knew that"はこういう場合、少し怒った感じ、自分が悪かったことを認めたくない感じがしますので、ご注意ください！
もちろん、イントネーションとストレスでも、気持ちをちゃんと表せます。
"Really. I DIDN'T know that."みたいな言い方だと、完全に皮肉って感じです。
つまらなそうな声で"Really... I didn't know that..."を言うと、興味ないか、「誰でも知ってるよそれくらい。。」みたいな意味になってしまいます。

We also use the term 'That's news to me!' to explain its something you haven't heard before

This is brand new information that I never knew about!
There are more than one way to express your surprise at a topic that you didn't know about until someone told you.
brand new: is another way of saying new but it emphasizes how new the thing is. For example:
1.This is a brand new car!
2.This is brand new information!
"Brand new" can be used with any noun.
